Pastita or ‘Spoodle’ CasserolePastita is basically a baked spaghetti casserole. I call this my Spoodle casserole, because I often use sweet potatoes for the spaghetti noodles. If you don’t have a spiralizer yet, bake up a spaghetti squash for about an hour in your oven, discard the seeds, scrape out the fleshy “noodles,” and use them in place of the sweet potatoes. You must add a spiralizer to your kitchen tools! A blender, food processor, and spiralizer is all you need. Oh, and a good knife is helpful, too.Delicious Raw ApplesauceNo need to cook apples to death when we have kitchen gadgets that do our work for us. There’s just no reason to buy canned. BUT, when I’m a lazy gal, opening a can works for this salad.
The raw (enzyme rich) ingredients in this salad make it delightfully refreshing and even better the next day for breakfast.Easy Blender Sweet Potato PieSoooo, if you'd like to avoid cracks on the top of this delicious pie, do as I say and not as I did! Just follow my instructions below and stop baking it while the center is still slightly jiggly! Even though this one baked a bit too long, it still tasted amazing. Using just nutmeg and honey really makes this a stand out from traditional pumpkin pie. I love the flavor of this pie and hope you will too.
