I love this easy fudge because just a few ingredients and my blender will take me to fudge heaven!
Coat a loaf pan with butter or coconut oil (or waxed paper).
*Use a loaf pan or double this recipe to fill an
8 x 8 inch pan.
Put the water and dates in a small saucepan and bring almost to a simmer.
Let set until the dates are very soft, how long will depend upon whether they were hard and dry or softer to begin with, 5-30 min.
While the dates are soaking, stir together the sweetener and gelatin and add to your blender.
Once the dates are soft, pour the date and water mixture into the blender and puree about a minute to dissolve the sweetener and gelatin, and puree the dates smooth.
Add the butter and chocolate and puree again until very smooth.
Strain through a fine mesh strainer into the prepared pan (or onto waxed paper).
Chill until firm enough to cut into squares.
